Ingredients
1 medium watermelon
Marinade:
1 tbsp fresh ginger
50 ml soy sauce
30 ml rice vinegar
½ lime, juice
1–2 tsp cayenne
1 cloves garlic
2 Tbs sriracha
2 spring onions
2 Tbs toasted sesame oil
2 tsp of salt

Preparation
1. Preheat the oven to 180 degrees C. 2. Peel the watermelon and cut into cubes. Place the cubes in a large baking dish or on a baking sheet. 3. In a bowl, mix all ingredients for the marinade until smooth and pour over the watermelon. Mix carefully with your hands. 4. Bake in the oven for about 40 minutes. Stir after 20 minutes. 5. Let cool and put in the fridge overnight. 6. Place the pieces in a sieve and drain. carefully dab the marinade with a paper towel.
